ORECCHIETTE WITH TURNIP GREENS
It is impossible to go to Puglia and not try the orecchiette with turnip greens. This dish is the symbol of Apulian cuisine and has existed since 1500. A simple and healthy dish: flour and water for the orecchiette and tasty vegetables for the topping.

FRISE
The friselle are dry and need to be soaked in water and then seasoned with olive oil and cherry tomatoes. They can be served at dinner or also as an appetiser.

PANZEROTTO
Some call it a calzone, others fried or panzerotto…what matters is that it is typical Pugliese street food. Mezzelune made from leavened dough filled with tomato sauce and mozzarella. They can be fried or baked.

CHEESE
Cheese with strong flavour such as cacioricotta, canestrato, ricotta, or some typical dairy products such as mozzarella, stracciatella or burrata.

PASTICCIOTTO
The typical Salento dessert originated in Galatina in the province of Lecce in 1745. The traditional one is made with shortcrust pastry baked and filled with custard. Besides custard, you can have cream of cacao, jam, cream of gianduia, pieces of chocolate and any other kind of filling as well as savoury.
It is ideal to eat it warm with a hot cup of Cappuccino.
